Deeply satisfying and palatable Chilli paneer. Chilli paneer is an Indo-Chinese style dish, with paneer (Indian cottage cheese) as its main ingredient.
INGREDIENTS
Paneer 250 gm (cubes)
Salt & black pepper to taste
Corn starch 1/4th cup
Oil 3 tbsp
Garlic 13-15 cloves (chopped)
Ginger 1 inch (chopped)
Green chillies 8-10 nos. (slit)
Spring onion bulbs 5-6 stalks
Capsicum 2 medium size (diced)
Spring onion greens 1/4th cup (chopped)
Sugar 1 tsp
Soy sauce 2 tbsp
Red chilli sauce 2 tbsp
Cornflour 5 tbsp + water 100 ml
Salt & black pepper to taste
Spring onion greens for garnish (chopped)
METHOD
In a mixing bowl, add paneer cubes, salt and pepper to taste and corn flour, mix and coat the paneer well with the corn starch.
Set a pan on medium heat, add oil and shallow fry the paneer from all the sides until golden brown. Set a pan on high heat, add oil, garlic, ginger green chillies and spring onion bulbs, sauté it on high flame for 3-4 minutes. Add capsicum, spring onion greens and sugar, continue to sauté it for a minute. Add soy sauce and red chilli sauce, sauté it for a minute. In a bowl add cornflour and water and mix well and add the cornflour mixture, salt and pepper to taste, cook until the sauce thickens. Add the fried paneer, mix gently and coat the paneer well with the sauce. Finish it by adding freshly chopped spring onion greens and take it off from the flame. Your paneer chilli is ready to be served, serve it immediately as a party appetizer with some schezwan sauce on side. Accompanies beautifully with rice or even roti.
