This is perhaps all the comfort food you need. Sometimes it’s hard to figure out what to make especially when your cupboards are perhaps already diminished of delicious ingredients from the huge shop you did from the supermarket only a few days ago.
This is where a little bit of creativity comes into the mix and we honestly believe you really can’t go wrong with this amazing Desi egg and potato.
This delicious dish, oozes warmth and yumminess. Get your family involved and cook it together.
The best thing is this dish will probably cost you less than a fiver to make
INGREDIENTS
1 small onion
2 large potatoes
3 eggs
Fresh or peeled plum tomatoes
1 tsp ginger garlic paste
1 tbsp coriander powder
¼ tsp turmeric powder
Salt to taste
Green chillies
METHOD
Finely chop your onion and golden fry in around 2 tbsp oil. Once lightly golden brown. Add in ginger garlic paste and stir. Add in salt and stir. Then add in your spices and stir. Allow spices to cook on low heat for 5 minutes.
Chop potatoes into thin round slices. Add to spices and leave to cook on low heat stirring occasionally. Once potatoes are cooked to your satisfaction, add in around tbsp of chopped and blended tomatoes, or from plum tomato tin.
Leave to cook for around 10/15 minutes.
Throw in eggs, but do not stir, allow the yolk to settle and form so it is medium cooked.
Once it is, then stir and combine with the potatoes. Add in fresh green chillies to taste, stir and leave to cook for around 5 minutes on low heat.
Serve with naan bread or salad of your choice. Or you can even just have it on your own it is yummy!
